Chinese Cabbage Salad

1 head Cabbage finely chopped

4 tablespoons raw Sesame Seeds

¼ to ½ cup Slivered Almonds

bullet

½ to 1 cup chopped Chives (or a bit less of green onions)

bullet

1 pkg of Ramen Noodles crunched (I use the Co-op brand with NO sulfites)

bullet

2 Chicken breasts cooked and chopped or 2 cans of tuna flaked

 

Dressing:

bullet

½ cup Rice Vinegar

bullet

¼ to 1/3 cup Olive Oil

bullet

2 tablespoons Toasted Sesame Oil (this gives the salad its unique flavor)

bullet

1-2 tablespoons Soy Sauce

bullet

Salt and Pepper to taste

bullet

2 tablespoons sugar or sugar substitute (I use Stevia)

bullet

2 tablespoons Sesame Tahini (optional and great for people with depression)

 

Free AnimationsMix first ingredients in a large mixing bowl. Drizzle dressing over the top. Mix thoroughly. Refrigerates well and is a bit hit for pot-lucks and summer get-togethers. Makes about a gallon.
